Before you get a canteen, custom drink is much lighter than any other carriable water source.
You can also make recipes that will restore a massive amount of stamina to your mount.
If you use modified settings or mods so that worrying about carry weight isn't an issue, then the only truly useful component of them that I've found is the stamina recovery for mounts.
At that point though, you could make the same argument about everything in the game having "no point". Tweak health recover high enough, and medical brew serves no purpose. Tweak player damage high enough and all weapons above the simple bow serve no real purpose.
I use them for the lighter weight (+stamina recovery as a bonus) for my own food, and for the stamina for mounts, that's about it.
So even if I have a food that restores 200 stamina it will take over 3 minutes for the food to do its job.
Energy brews are 8 times faster.
And spoils significantly faster, and weighs more for the amount of stamina recovery you get.
If you're using custom settings such that weight and spoilage don't effect you, then perhaps it's no point. You could make an argument that any item in the game has "no point" after tweaking the right settings to make them pointless...
You're not wrong though that the custom stuff doesn't "replace" brews, but I don't think the point of it is to do so. More like they are a light weight, low spoilage alternative for when recovery time is not of the essence.
Energy brew is also pretty much useless on tames unless you enjoy spamming a ton of it. It just doesn't restore enough stamina. A custom pet stamina food recipe, on the other hand, can restore a ton. Sure it takes a while, but I personally find it very useful to use as a steady stamina gain while riding, particularly on my flyers.
