its -63°C cold and it still says it's too hot.

Also I'm down to 3°C and its still saying too hot
How many airconditioners exactly and how closely are their area effects overlapping? Each unit has a small radius that gets the best temp balances and as you go farther from a unit it's radius of temp control lessens. Thus in some cases you have to stack units not just around but also above and below so that the spherical radi can have the best overlapping in the highest concentration.
Also make sure the building has the house icon so that temp/insulations work better too.
If all that still isnt acceptable and you're playing in single player or on a server that can use mods, just use a mod with an incubator in it: S+(but it stops incubation at 1% intentionally), Automated Ark, CKF( I like theirs as it requires no power and is relatively easy to make), and many others.
The area was a constant 28°C (the overlook)
Nooblet or some such channel on YouTube did a video about incubating them which I kinda copied a bit while at my wits end.
So I used 12 air conditioners place 4x4 with a 2x2 square in the middle of them where I’d put the egg.
Additionally I built this into a square room 2 walls wide, 2 walls long with a door. All stone. This dropped the egg to 3° which it said was still too hot
