Can official servers reset and if they can when they do that

The main official servers are no wipe.

There are a few mode that have a wipe cycle.

1 month Arkpocalypse
3 month beginner
Seasonal Conquest/classic

they will probably reset sometime soon I expect, that's what happened on the official launch after early acces ended

... they didnt wipe after EA.. they made EA servers Legacy and made new servers.

There are over 65,000+ unofficial servers currently. By contrast there are only around 1000 official servers(thats official and legacy combined by the way).

The majority of the player base do not play official servers for many many reasons. Do your own due diligence and find a server that best matches your wants.. Most use this website since its the most comprehensive website with the best filters for searching ark servers. The in game search system cannot do the same comprehensively:
