Can you destroy turrets with a longneck rifle?

I shot it 3 times with my longneck but the hp doesn't go down

What other ways are their for destroying a turret that is standing on a ceiling?

Cannon is the only effective long-range way of taking out a turret (plus Tek Rifle) afaik.

Other than that, tanking it is the only way.

You could try to make a “siege-tower“ with a paracer, but I haven't tested it yet and it would require 2 people.

And how many grenades does it take to destroy a stone wall? or ceiling? and can I throw the grenade out of range from the turret and can I throw that far?

what is your power level?
just tank it with a rock ele, durable and can throw boulders

Depends on turret settings. It will most likely shoot the grenade out of the sky before it comes close enough. Same with rockets.
There is a wiki page on how much damage explosives do to certain structures.

Ok you don't “need“ 2 people, but it would be more efficient. Otherwise you'd have to take care of the paracer and place C4...

Find a spot where it fires at you but cant hit you, and drain it. There is usally somewhere around, like lying next to another crop plot, kink in terrain etc, you just have to find it, otherwise grenades work well as someone mentioned, or fire arrows from scorched earth. We used these methods on the notame servers, might take a while but in the end you get get past any number of plants this way. Plants are only able to delay, not stop. Or build a tall tower from thatch, and parachute over the base, dropping grenades as you go, make sure its high enough to avoid plant fire :) If your not playing on a hardcore server, then build a few foundations, lay down alot of beds and keep at it, keep your grenades nearby and only take enough for each attempt. Throw, die, rinse repeat.

Only works for X-Plants though... autoturrets shoot at grenades.
