People probably use them to get plenty of chitin in the volcano.

No snails on Genesis to make CP so need to make it from Chitin.

Best Chitin farm is running the 1st part of the Egg-Straction quest on a Megatherium.

I haven't found another use for them but that one use is enough to make them critical.
