It's an old bug. Will hopefully get fixed soon.

It is a bug, in my experience it depends on the terrain/area hether they lose hp during taming oer not. I tamed like 20 snails on The Center map, and if I did it on th shores close to the swamp they always died, If I broght them a bit more east, they didnt.
But it might be just coincidence...

Just remembered: Might have something to do if they're damaged prior to getting knocked out. Best bet is to only take "healty", undamaged snails and take them home for taming. If they're damaged, give them some time to heal up a little.

Maybe you didn't put food fast enough into their inventory? They get hungry, incredibly quickly, and especially on the low level ones, if you don't put cakes into their ivnnetory immediatly after they are knocked out they starve.

They're too far away from water, snails need to close-ish to a water source or they'll lose health.

Never heard of that. Tamed mine inside my Base (fully enclosed room) far away from even Water Taps...

jup
and if you find a snail too far from water, you can simply use grabling hook to carry it to a lake befor you knock it out...
thats how I do it, have a nice little base build onto a lake or river and simply drop the wild snail in it befor knocking it out^^

its true though, but the "ground" water is enough, if you build your base on very low ground, it counts as close to water (because if you look under the ground, the entire map has water under it :))
and this being-nearby-water thing ignores walls etc, the distance disregards objects in the way
