Can the game be beat solo?
I just wanna start playing this game again, and i wanna know if its worth trying to play solo? I've never beat the game, it looks really fun and i'm just wondering if its worth it.

Depends upon the settings you are using and such.

Completing the game in true singleplayer, meaning not on a public server, is completely plausible.

Completing the game on a boosted, player-hosted server is still plausible and I have come close to soloing but I always manage to get wiped right when get good dinos.

Now, completing the game on official servers will be one hell of a ride. It is possible, but be ready for literal days and weeks of grinding, getting wiped, and repeat until you come close.

Has anyone ever beat it solo on an official server? If they have they deserve a prize.

You can beat the game solo. If singleplayer or unofficial server, be prepared for many days or weeks of breeding them Boss fighting dinos. I would not even attempt on any Official PvP or PvE server, to many griefers. Singleplayer has an advantage as some dinos react differently, like the Yuty having an auto courage roar in singleplayer where on a server, it does not and requires a rider. Singleplayer has an option to make the game easier for solo also, but it is completely feasible to solo with that option shut off. If you get back into Ark, Good Luck on your journey.

This is a bit of a silly question since you have more tools to do so than anyone playing official or even unofficial servers because you choose/control the settings for your single player iteration and you also have access to admin commands mods and more.

At default (ie official) server settings? Sure but you'd take an extremely long time to breed dinos to get there.

At any setting you want? You can literally, use admin commands to summon in all bosses(without going to them) and kill them instantly.

Those are the two ends of the spectrum for you. You've got tons of choices in between.

Genesis can't be done solo. without CRAZY multipliers.

The Missions like "Bog Beatdown" you can't bring tames, you can only use the weapons they provide, and you can't bulid a 'bunker'. They CAN"T be done, which is complete ♥♥♥♥♥♥♥♥♥♥.

So up until Genesis, sure, but Genesis can't be completely soloed at this point, mathematically impossible.(Unless like I said, you have STUPID higher modifers, where you could one shot a T-rex with a Pick)
