Does that mean if I start a new game now there won't be any weird event stuff? Isn't there always some event going on? I mean, I would feel better if I can just turn it off forever
You do not even have to do that. All you need to do is when there isnt an event present and if you have legacies of colored dinos from other events, just use the admin command to destroy all wild dinos. They will reset(and this is actually a good idea to do once in a while for dino balance purposes, especially on some maps) the dinos and colorations.
Outside of that, you can also opt as Mardok said to prevent events from occurring as a launch command.
However, you need to be aware of one thing you cannot prevent: vivid color variations due to breeding mutations. You will still end up with that because that too is considered part of the "vanilla" experience. You have to remember Ark is not a prehistoric game. It is a post apocalyptic Sci-fi game and thus anything goes to a certain degree.
No extreme colors.
by messing around with ini files...uninstall and install cracked version of before these changes works as well...it should be an option, not a struggle (in my humble opinion)
just returned here bcsz Atlas suddenly became unplayable after a few weeks, do appreciate the suggestions tho

Its been a sci-fi game from the start. What this really just boils down to is your wants and expectations simply not matching the reality of the situation.
Sounds like then you just are probably better suited to shelve the game until it matches your delicate sensibilities if you're simply not willing to accept or roll with the way things/options available to you are.
You have the tools to tailor the game to exactly how you want to play.
