Welcome to gaming in 2018. Given the cost of storage relative to the other components of a rig needed to run Ark (looking at you GPU), quitting the game because it takes up too much space on your drive is akin to refusing to take your Maserati out on the interstate because of the cost of tolls.
Game Library>>> Ark>>>> Properties>>>> DLC tab>>> uncheck the DLC you don't play on and then install. You can always download more later.
