Dying is a learning tool. If you're dying alot, it should mean you need to rethink your choices and actions.
If you're getting surprised by creatures and that's the main culprit of your issues, that should telll you you're taking risks and not developing awareness to see/know what's going on around you.
If you are playing in single player, you can of course adjust settings such as player damage resistances, how much damage dinos do in the wild, how much damage you do as a player and more. You should be aware of these settings if you were watching various tutorials as you state.

Scorched and Aberration are harder than The Island is. I don't play the center or ragnarok much, so I can't speak for those.
Bolas are your best friend, even at high levels. They stun most small-medium creatures and stop them from turning, allowing you to run, tranq, or kill them with ease.
Situational awareness is key in ark. Always take a look at your surroundings.
Tame a dilo and have it follow you. They may be weak, but they're ease to replace and their spit slows enemies, allowing you (but probably not the dilo) to escape. Dimorphodons are also nice to have following you and are easy to tame. Raptors are the next step up, and if you get a few of these following you, you're probably safe from most things unless it's a rex, which you should be able to both see and hear coming.
If you still feel the need to make your game easier though, there are settings for player resistance, damage, water/food/stamina drain, health regen, and all this for tamed and wild dinos too.
But is there maybe a beginnersmap in the workshop?
What I now find a bit boring is that I have to redo the beginning part over and over again. (making the axe etc) So that keeps me a bit from having fun with it. But I will keep trying because I really think I will enjoy it if I come a bit further.
Ark is a different survival game, on default settings and on foot, you defenatly arent the apex predator. DIffernt creatures have different stratagies to deal with, but there are too many to just list quickly. Can you give us a short list of the things causing you issues?
Then as you begin to understand the game better you can reset the changes you made.
Increasing your resistance makes you stronger. Decreasing Dino's ressistance makes them easier to kill. There are at least a dozen settings you can change. It's a good way to learn the mech, of the game.
At least, it used to be this way. I doubt it was changed.
Wiki: "The default value 1 provides normal damage. Higher values decrease resistance, increasing damage per attack. Lower values increase it, reducing damage per attack. A value of 0.5 results in a player taking half damage while a value of 2.0 would result in taking double normal damage."

Ark is a game about survival and learning from your mistakes. Situational awareness is also a BIG thing in this game. On the beach I strongly recommend you get yourself to the point where you can craft bolas, a bow, and some tranq arrows. With the Bola you can trap a Parasaur and knock it out fast enough with a few tranq arrows. Once you have that mount I recommend going for Hide Armor. Once you have all of those you should be able to scout the southern areas on your Parasaur and look for either a Trike or Raptor to tame. Trikes are a great starting mount. Also if you don't mind playing with mods, i recommend the Death Recovery mod. It allows you to place a tombstone (Personal Grave) that lets you retrieve the items off of your corpse if you die.
EDIT: Also forgot to mention that there really isn't an easier map in the workshop. As far as I'm aware The Island is the easiest map. The Center, Scorched Earth, Ragnarok, and Abberation are all harder.
You will probably want to adjust things like Taming Speed (I honestly used 10-20x for myself on SP) because it takes hours and hours for many of the tames. Reduce your resistance to .7 or .8. It's an overall adjustment, so you probably won't need much else. Gathering Rates to 3-4x since that mimics a tribe's abilities. Maybe increase your damage, or decrease wild dino damage. Those values will be up to you to work on though as some people's idea of a fun time is last second wins and death defying combat.
You are going to die, a lot, a lot a lot. It takes a good while to get adjusted to this game and how it functions. Once you get comfortable though, you will find yourself able to spawn in a new character and level, build, tame your way to max level without thinking about it. Many of the supposed Beginner areas are absolutely filled with nasty aggressive dinos. Don't know wtf Wildcard was thinking when they tagged some of these places or put multiple Theri spawns in them.
Above all, do not get frustrated. Learn the basic mechanics of the game before you touch the console to spawn things in or give yourself god mode. How to craft, what to craft, what to tame, where to find all this ♥♥♥♥, that is what you need to focus on before using some of the specials SP has to offer. Remember, you're #1 weapon against the vicious bastards trying to eat you on the ARK is those dinos you tamed. Use them for offense, defense, and pack mules. It will make your game much easier if you lean on them for support.
Once you have a little base established in a safe spot, it becomes a lot easier to recover without having to do the whole beginning routine all over again. I would suggest taming a flyer asap, a ptera would be the easiest for you, so you can explore around more and find a spot that you want to live. But until then, try to find a safe place to stash your things and a bed so you can get started.
