Approach the equus typically from behind.
When you see the prompt "press e" to feed, then feed it then immediately press e again so you mount the equus.
Then press e again to feed it(as it will be kicking to eat again).
Then it will start running around in random directions. Eventually it will stop and do the kicking animation again and the icon in the bottom right will light up. Pres E once again to feed and it will running around again.
Timing to eat is random, running around is random. If you miss a feeding timing when its kicking, it will dismount you, kick you(usually making you go unconscious) and you'll lose taming efficiency bonus levels and taming % time too. You'll have to chase it down and mount again.
However not a small amount of the time dismounting for any reason will cause its taming to break and it will go back down to 0% and you'll have to start all over again and with a risk of it also detecting bonus levels lower for efficiency as well. Its really bad about this sometimes.
Depending on the food used, and the server's taming rates, you may be spending a very long time trying to tame one.
Additionally, if an equus takes damage from either a fall(since they run off cliffs and rocks sometimes) or from dino attack you'll lose the above % etc too.
If you have a lasso you can more easily tame them or if you manage to pen the horse with gates it can make it a bit easier/safer.

As I wrote if you read carefully, when you press E the first time to feed while not mounted and then mount, you immediately have to press E again to feed (watch the icon prompt at the bottom right instead of always watching for the animation, its safer.) If you dont(as I mentioned) it will knock you off and kick you unconscious.
However, since you've said you're doing this on an official server, if you're not using kibble or rockcarrot, thats going to be an extremely(and I mean extremely) long taming process.
With for example mejoberries, it would take a 150 equus 1100+ berries and about 20 hours of you riding it feeding it.
With rockcarrots it would take about 60+ and 40min-1hr
With trodon kibble it'd take 13-20min... but trodon's are even worse to tame on official imo due to having to sacrifice other tames to tame them.
Thus I highly suggest playing on an unofficial server with much better rates so that passive tames are not going to be so painful
