They're saying that giga has 2 damage types that it does. A base damage effect based on melee settings and a secondary effect that automatically removed a % of the health of the dino on an attack(ie the bleed mentioned).
That typically means a dino dies pretty quickly against its bleed effect if the damage output/healing incoming for the dino isnt fast enough. Whether that translates to a min for you or not is not necessarily an accurate consideration. Could be shorter or longer depending on other factors.
Their point is that such exists and for you to plan/consider accordingly.
that's 100 seconds and you're dead from bleed alone, then subtract the base attack damage you're taking, and giving yourself 6-10 seconds of time after the fight is over so you don't die to bleed damage after you kill the giga.

The higher armor the better odds, wouldn't do it in a prim saddle though.
