Stegos have the armor plates on their back, preventing damage to player, turrets set to players only can be run dry if you get the stego and a rider in the right place, though this is extremly hard to pull off in most cases unless you know what your doing and have done it many times before, it makes for a good/fast blitz mount to infiltrate players bases when turrets are not ground level.
Trikes are sort of the same, head only damage reduction, not recomended aginst large bases with turrets everywhere.
I dont pvp anymore so someone might be able to counter what I said and give more relevant info, so just a heads up on that... Never used a pachyrhino in a fight eithor...
Another PvP trick I used to do back in the day was take two metal foundations and six to eight door frames. Place the metal foundations inside the turret radius but outside the build exclusion zone. Place down the door frames facing the enemy base. (If you bring 6-8 you'll have extra for when they shoot through the ones you've already placed...depending on the direction of fire you should only need 2 or 3 frames placed at a time). What you have here are poor man's fighting positions. Peak out from around the metal frames to snipe/shoot enemy turrets Plant X dinos and players.
They won't last forever, but they should prove useful for quite a while. As far as braving enemy fire long enough to set up the position...I'd practice around your own base first to get a hang of building that quickly. You should only take a few shots from Turrets before you have shelter.
