There is even programs to automate this for backups while you play.
Or use ASM to run a LAN server, then the save files are completely separate from the client.

Second... or maybe first since it's quicker... Make sure none of your save folders/files, particularly your LocalPlayer files (since the character seems to be what you're losing) are marked as read only.
Edit: Also, given the circumstances where you lost the characters, yeah, that's probably a huge contributing factor. Stuff like that tends to corrupt files, hence why people are suggesting regular backups. Game files are no different than other files you don't want getting borked by a crash.
You could use console admin commands to give yourself those lost levels back, and reclaim all lost dinos/structures of the tribe. It would be all of 2-3 commands, xp command, force join tribe command, force to become leader of tribe command.
It would seem you are also having issues with corrupted save files, you can change in .ini files for ark singleplayer to change save times to be every 5 minutes instead of the default 15, so if crashes do happen its less likely to corrupt again or you won't lose progress.
Honestly, if anything try hosting it as a private/passworded lan server(from the singleplayer menu) and it creates different files/saves and saves almost every action. I do this and I havent lost a save in ages)
how do you password-save a non-dedicated session? I only get it admin-pw-saved. But not complete private...
Upload whatever character you are on at an Obelisk and you should get a list of all single player characters that you have available to download.
Lots of problems with Ark but honestly this sounds more like an ebkac to me
