in the guardians dossier there are 5 titans but in game there are only 4 desert ice forest king where/who is the other one?

Alpha King Titan is the fifth one.
It does have a stand alone model with a big scar on his chest left by storyline characters.

To summon it you`ll need heads of all titans including the normal King Titan`s Gamma and Beta trophey. Upon defeating it you will be awarded with some special game end story.

"The King Titan is the only boss:
- that has two different variations in appearance.
- of all titan that can't be tamed unlike other titans without using forcetame command.
- that requires previous difficulties of its trophy.
- that has a secret ending if defeated at Alpha difficulty."

Just be warned that the Alpha King Titan is WAY harder then fighting the dragon on alpha

this is mainly because the mecha king titan is way stronger and can take a lot more punishment, your best bet to even have a chance at beating it is by using the mega mek which requires 4 mek's and the M.O.M.I from the beta king as the mega mek can ONLY be used during the mecha king titan fight and once the mecha titan is dead....the mega mek will auto self-destruct

and fair warning when you fight the mecha titan: expect to lose a good number of breed for battle giga's cause they will struggle to survive against this behemoth

but after i defeat the alpha the fifth dossier nt unlocked
