Ive been building ontop of a cliff near the map limit and i simply build pipes along the cliffside to the nearest river or water source.
With them climbing axe you can build to almost everywhere. My Water line is about 100 meters long and "no water nearby" isnt a excuse.^^
Anyway, go just outside of the portal spawn. I tamed a raptor before jumping down so I could run away from anything too nasty, and that kept me alive long enough to build a stone building with a smithy, a forge and a bed. Then it got killed by ravagers and I had to hang from a mushroom for half an hour, but now I have my own army of ravagers and some roll rats. Not a hard to start up, even solo. Just be prepared to have to do long distance trips for metal.
EDIT before anyone tries to tell me I'm wrong about the aqua mushrooms, I'm not. My client and the server I'm on are both updated to the latest available patch and they do not work. It may be a player-specific bug.
They do not work.
All that being said, I found the "easy" tunnel you spawn in to be far more challenging than spawning in one of the fertile lake zones. That was a much better place to start.
One could think the title would give it away.^^
