Check out his builds. not sure if he is doing anymore vids but I have used two of his builds on official servers, I modified them slightly with different materials.

Just work at it. It will be more rewarding if its all your ideas or only slightly inspired by others. I would recomend mods though since the ark developers are terrible at making decent structures or building mechanics.
Currently building a castle with the castles keeps and forts mod (might have got name wrong) and a few Eco mod items and having a good time with it. Regretting the size i made it since i only run 2x gathering on my server but I can tell you that for better or worse there wont be another base like it.

I use youtube for ideas and after a few builds you will start combining ideas of other people and get your own creative juices flowing
