A good early tame is the raptor. Hit it with a bola, then shoot it in the face with tranq arrows.
First of all, welcome to ark.
Second, a phiomia while you can ride it, isnt a good first dino option. They are easy to die and eat more often than other dinos(this is because they poop more and poop is used to make fertilizer for advanced crops. They are also a good source of meat when you kill wild ones and hide too.
A better all around first tame is a trike. They can defend themselves decently, gather berries and thatch etc.
As for the running away part, that's almost true of all the animals, especially if for some once their torpor(the bar for falling asleep) becomes closer to being filled.
For some you can lure them or herd them into rocks or a building you've created to trap and tame them in. For others you can use a bola to temp make them not run(doesnt last but for a very short time), and others you just have to chase n shoot as you go(but be ready at a moments notice to run away yourself(especially if a predator) if they turn around to attack you).
