so if the base amount overall would be 10 and i increase the health to 2 i would get 20 but would have to hit it double the times to get it?

HarvestAmountMultiplier=x.x = the amount of stuff it gives in total.
Pretty sure, lets say a rock on the ground you pick up 1 stone with default. If you increase it you'll get 2, 5, 100 stones from the same 1 rock.
And the same happens with everything else, more meat, hide from dead dinos and go on.
Edit: oh sorry I missreaded, post above mine is correct.
Basically it determines the time you spend doing the mindless stuff. You could decrease it to add more focus to the more enjoyable things. Less hitting, more building/fighting etc.
If you increase the health by 2 but the amount by 2 too you would get 2 times the basic resource but it takes double the time to get it too so its kinda balanced.
