And the quetz would literally fly right through it every time. I tried wood, stone, metal... and no dice. I was on the Center map if that makes a difference.
I ended up taming my first quetz using the grapple from an Argie and whistling attack my target. (this was of course before the nerf)

I don't know if it still works but it seems like a pretty plausible way to solo tame a quetz. You would need to make sure to have a ton of supplies on you, including fence foundations and walls to put up around the quetz when he goes down. As well as a literal ton of narcotics. Kibble if you can swing it, otherwise once the quetz is out and you walled it off from predators you could just go get some prime meat, or if you're lucky some mutton.

Ya you really need to quickly wall it off wherever it drops. If it drops in the middle of a pack of allosaurus's or something then yep, probably a waste of time.... But that would be Ark.
This method does also work with low lvl Tapajeras I tested it with a lvl 30 or so a few days ago. It doesn't drain stamina when in the front seat and it's fast enough to keep up with the Quetz.
I'm pretty sure that the reason for this is that you were riding your quetz at the time?
If that's the case then a wilz quetz will just ignore the structures in its way. You've gotta be quick to dismount when you're about to trap it, which makes the structures count as solid for the purpose of boxing it in.
Do make sure to keep an eye on your quet'z stamina though, I'm not sure how that works now if it regens or how fast it drains when you've dismounted in the air. We run classic fliers on our server so I'm a bit behind on the flier nerf updates.
