noticed that after the fact. I usually build one side... then build the other off of it. Trying to link buildings doesn't work so well since the pillar heights change if you place them vs placing the ceilings first.
It's tricky but can still be done with roofs and ramps, sometimes you have to use a roof and others a ramp (especially if you have walls in place for a stair well/ramp... sloped walls = roof for sure)
Build a Wall on the right side of the lower ceiling. place a ceiling on the upper part of the Wall so that it continues to the right, place a second ceiling to the right, from that ceiling pillar down to the ground. Then remove the wall and the ceiling directly connected to it, then place the ramp.
small hint, use thatch parts for everything you're going to destroy later.
1) My pillars are EXACTLY the same height at ground level. I can make a video on how I do this, but suffice to say the higher pillar is EXACTLY one pillar taller than the lower one. It is also EXCATLY one tile over. Pillars do snap to each other and allows for specific placement.
2) I will upload a second screenshot in a bit. The problem I am having is that the sloped roof will only snap underneath the upper ceiling tile. It will not snap out, only under. I will try the wall idea next and see if it works, but I tried something similar and when I destroyed the extra parts the roof fell also.
3) Ramps don't work here. They are at maybe a 60deg angle, making them always fall short. My pillars are precisely every fourth ceiling tile and exactly the same height up to this point, where I purposely built one extra pillar on so I could stay in the air as I climb a small hill. If you can show me how to make a ramp work where it isn't too high, too low, too short, whatever, I can try it.
4) I will not run any mods right now. The only mod I want to run is Primitive+, but that never works (broken as hell) so I am running plain Ark for now.

Yup you're right my bad, i was so used to the stairs from the Glass&Metal Mod that exactly cover that distance that i mistaked them as ramps. sorry for that.
I'll wait for official to get fixed. On a related note, and not to sound like a complete imbecile, but I have yet to see where to launch Scorched Earth from. Granted, I haven't looked very much since I am enjoying the stock game, but it isn't obvious like P+ is.
Finally, here is a screenshot of how the sloped roof will snap. It only snaps back underneath the tile, not out and away from it, which is silly since if it can snap that way why can't it snap 180deg out?

Oh and I tried the wall method mentioned above but every time I destroy ANYTHING the sloped roof falls. Maybe I am doing it wrong?
The only solution i found was to build another lower ceiling towards the pillar of the higher one.
then placed a sloped left wall on that ceiling and then i was able to fit in the sloped roof, didn't look really nice, but worked^^

the only other options i found where either the reinforced stairs from the Ark Advanced 10 or the Glas & Metal Stairs that worked the way you want them. But you ruled out using mods, so :-/
