Each saddle has an armour rating and a durability rating on it. As far as I know the armour rating is the amount that is stopped from wild dinos. Note that the armour rating for the same type of saddle differs, so if you get a primitive saddle from a drop it will have different amounts from one that you made, each one is different. This can also mean that a lower class of saddle could be better than a higher one, for example we have a low Mastercraft one that has a lower armour rating than an apprentice one of the same type. Hope that this helps.

(100/100+ Armor)* Normal Damage

So if a dino was going to get hit with 500 damage, and they had no saddle, they take 500 damage

But if they are using a 100 armor saddle, they take half damage (100/100+100) = 0.5 * Damage

So they only get hit with 250 damage

Yep but different damage type bypass some armor, but more or less, a 50 armor saddle will reduce the damage taken by 33% (100/100+50) = 0.666

Damage to dino = raw damage * (25/(25+saddle_armor_rating))
Base saddle (25 armor) basically halves the damage received (for projectiles and probably dinos). Some dinos have innate resistances overall, some receive reduced (or increased) damage if they got hit in certain parts of their body.

Thats for players.
