Although, in addition to what you mentioned in your original post; It's possible that cheese may end up being a thing, I mean a sheep just got added so what's to stop a ancient breed of cow/yak or something from joining the ranks of ARK's creatures and allowing us to produce cheese and milk.

Not because i want to be vegetarian it is just because mushroom and rare flower not spoils.
Get mushroom and rare flower from beaver dam.
As for idea itself i'd suggest Primitive+ mod because there are way more options: different brews, honey bee hives, veggy recepies etc.
In normal ARK at later stages of the game you can live off custom recipes[ark.gamepedia.com] system as long as you dont add meat/fish/eggs. Plus custom foods/drinks restore HP/Stamina and weight 10 times less that original ingredients and have an increased spoil time.
Commercial eggs are unfertilized. They are actually single cells (as far as the yolk is concerned), like human eggs. And I think you're mixing vegetarian with vegan:)
You can make custom recipes out of like just berries and stuff, I bet you could make like veggiburgers and all that if you really wanted to :)
