Have yet to try myself though.
Another idea is to tame as many argies and other flying creatures as you can, level them so they can deal and take lots of damage and have them follow you. Wear good armour. Ride in on your best argy and use the others to mob the wyverns and destract them while you fly over and steal the egg. It took me several trys at this before it worked for me. Maybe you could combine my idea and the one with the wall climbing cats? Anyway, I haven't been to the Trench since before the flyer nerf, so i dunno.
If you have a freind and you get him to lead your army of argies and really rile up the wyverns while you take the egg, that might work. Sorry I can't be much help, since the nerf I haven't had much expirience with flyers (again, because the game won't work).

Someone already pointed out the Thyla's (climbing cats). Luring wyverns away with bait can help to clear the area prior to your "egg grab".
Because you are SP you don't have to worry about other players bothering you. You should be able to build structures nearby to help your safe escape.
I've not done it myself but -- I heard that players had been able to grab eggs without using flyers -- they used grapling hooks. I suspect they also had teamwork involved.
It might be possible for you to grab the egg & put it somewhere quickly. Then, after the wyverns have munched on you --- you could respawn and come back for your egg.
I would imagine the egg would still be in your inventory if you died with it.
Not entirely sure of the effectiveness in the World Scar though, the walls can be pretty rough at times. Would need a huge speed/stam boost to get around.
Bring some grapples and maybe a few parachutes just incase.
Health in the kitty might be a good choice too.
They can be pretty quick on the walls too, and they're pretty beast when it comes to jumping.
You get some great landscape views with them too. Night time, mountains above world scar, staring out at the scorched wastes... No bloody wings blocking out your view... Lovely.
