Are we talking about the base game, or about either Rise of the Samurai or Fall of the Samurai? Also, do you have any mods installed?
About what happens on the battlefield: is your general still alive when the troops start running? Are they getting flanked or hit from behind? Are they routing when other units start routing?

Shogun 2 doesn't really have heavy cavalry, though. In fact, Generals, as a unit, are actually in a weird spot: they are not heavy shock troops like their counterparts used to be in RTW or MTW2. They are light harassers at most, and even they they need to be very careful when around spear units.
1540AD Lord Oda Nobunaga adopted firearms with great efficiency and strategy.
Shimazu used firearms around 1600AD. As the Portuguese brought firearms around 1540AD also. I would say not future, but smack in the middle of the Feudal Wars.
Does not make for good play, given the mix, but that's history.
