But economically a market is much much better, you get more money per turn and you get more growth so you get more future money.
Mizu Shobai would be great to have for its tax bonus in a rich province like Omi, but it takes so long to research that by the time you unlock it, you probably don't have access to silk anyway, especially if you hit realm divide. Not worth the time investment that it requires. I don't like geishas for the same reason, it's very tricky to get them and then they get assassinated constantly anyway.
Edit: Mizou Shobai give +25% tax so this one building maybe worth it in rich province with metsuke.
This is a big help for anyone that has problems keeping their agents alive.
Other than that for that one building, I wouldn't bother upgrading sake dens elsewhere.
[Edit: Also, if you are first to build it, which I find is always the case as the AI doesn't seem to prioritise it (perhaps the Hattori would if they survived long enough), then you gain a bonus 5% to ALL ninja actions - which is always good to have].
Buddhist temples might actually be better than sake Dens for standardizing PO + monks and your getting research to get down to the growth techs.
