And if you just happen to have a batch of your own trade ships conveniently sitting right by that trade node when it opens up no one's the wiser when you grab it for yourself.
I only attack ships on a trade node if I am already at war with the clan.
Going to war for a trade node makes little strategic sense. Your wars should be about acquiring provinces. Taking the trade node of a clan that you are at war with, to harm their economy, makes sense.
Edit: Oh and Markeson's first sentence above is typically what I do as well, although usually I try and save time by sticking a stack of 10 trade ships by the node.
I'm too tight to pay the upkeep on all those boats - they may have a long wait for the node to be liberated :)
