So if anyone could help, that would be great.
Did you check to see whether the application was muted in windows (I have made this mistake)? Right click on Speakers icon in windows task bar and select Open Volume Mixer. Make sure that the Shogun 2 application is not muted there.
Crashes, I recommend the following:
Make a list of all mods you are subscribed to on the Steam workshop. Then unsubscribe from them.
Copy all mod pack files in your data folder to a temporary directory and delete them from the data folder.
Locate the User.script file:
C:\Users\User\AppData\Roaming\The Creative Assembly\Shogun2\scripts\
Delete: User.script file
Note: Appdata is a hidden directory so make sure you check the Hidden Items box on the view tab in file explorer
Run file verification in Steam.
This will give you a clean install without any mods. Fire up the game and check it works.
If that works ok, quit the game. Re-subscribe to the workshop mods, copy any mods you removed earlier back to the Data folder.
Launch the game and activate the mods you want in the mod manager.

What was the fix that worked - in the interest of furthering my knowledge?
I go into AppData and Roaming but The Creative Assembly folder isn't there.
In the Steam Library, right click on the game and select Properties.
In the new window, select Installed Files
Then select Browse
This will open an explorer window at the directory where your game is installed.
If it doesn't, I guess you need to install the game
