Of course a Samurai Unit will win against an Ashigaru Unit, Samurai are Warriors who train their whole live, Ashigaru in comparison are comprised of mostly draftet civilians.
Samurai are also more expensive than the Ashigaru and need advanced buildings to be able to recruit them.
Ashigaru might not be as good as Samurai, but they are definitely not useless, especially if you consider their cheap prize and that they can be recruited everywhere.
Ash are how I win all campaigns, everything else is icing on the cake recruited because they're fun to put to use and not because you need them to win.
But I don't feel like being drawn into a ahsigaru vs samurai debate ... because for every samurai debating with an ashigaru about which is better there is another Ashigaru out taking all the samurais land, wealth and women.

Ashigaru are like scumbags that society has no use for. Like every Ashigaru unit in my game are liars and thieves and scum. Its not that bad playing as Hattori with the bandits from the criminal syndicate network I wonder why?
I went independent in my game and I have the lowest taxe rate on the island. People love to live in my little empire I got going on with Japan. Including these turd Ashigaru units.
Guns and Christian ships make for an interesting campaign.
Ashigaru and Samurai is different in each clans.
Take a look at the Oda, not only that they have the best Ashigaru, Historically, Oda clan is one of a few clans that allows their Ashigaru to be promoted to Samurai, Toyotomi Hideyoshi is one example.
Besides, if you want the most honorable people in this period, its the Ronin and Ninjas.
Ronin's don't have a master, and some Ronin often protect villages, but some become bandits.
Ninjas have a loyalty of steel, Tokogawa Ieyasu have been saved by his Iga Ninjas a lot, even at times where the Ninjas could just betray him, but they don't.
Samurai can in fact betray you by changing masters, this happened often amongst young and elite Samurai, plus since they're samurai they have the social power to betray everyone for more power, while Ashigaru just want to survive, and come back to his wives and 2 children.
