Playing this game for the first time since the Gamecube and...
It's okay, but they really seem to be out to annoy the players a lot in its design. I'm playing on normal and constantly have almost no ammo, they regularly respawn enemies in rooms you've cleared out (even if you just cleared it out, exit and re-enter), the NPC doesn't know how to dodge and keeps wasting ammo if you equip him/her with a weapon but also keeps getting hit if you don't equip them with anything, they stuff tiny rooms with 3-4 enemies, tiny inventory space while bombarding you with 2-slot items, etc.

I'm playing with some QoL stuff turned on through mods such as having a storage box at every type writer and short door sequences. Game's okayish so far, but I think like in the GC version I'll just give it 1 playthrough. There's too much clunky switching around and other minor annoyances compared to other RE games. You technically have 12 slots in this game, but it's misleading because you need at least 2 weapons and like ammo for each character. If you want healing on top of that that's already at least 3 slots (or 4 if you have a dual slot weapon). So really you only have like 5-6 slots to work with if you want to be somewhat prepped. Even with the item box QoL feature there's still quite a few item box management features (well, to be honest it hasn't helped all that much so far. Wouldn't have been very different if I just left the stuff in a central hub place).

I feel kinda the same about it as before. It's worth a playthrough for fans of the series. The game looks great graphically (especially Rebecca), but I'd have a hard time recommending it to someone who isn't already familiar with classic RE gameplay.

It's supposed to be challenging. Sounds like it's not the game for you. Inventory management is central to the game. It's a puzzle game.

Be careful with the Item Box cheat/mod. You can softlock your game.
I make a new save file regularly so that shouldn't be much of an issue and I also turned on the ability to leave items once I noticed I couldn't at the scorpion boss. Worst case scenario I restart the game and get to the same point faster and do better.

Annoyance and poor game design aren't challenge. You don't have a box in this game like in other games, but the game throws key items at you like there's no tomorrow and there's too many 2-slot items. I love puzzle games and it doesn't really feel like puzzling to me here. I suppose a few like it, though the majority seems to agree with me that it's not very well done and just feels too restrictive with just how much extra backtracking it results in.
RE0 is a piece of crap, compared to all the other OG games. They could have made something as good as RE1 or 2, but they decided to poorly implement decent ideas and then ♥♥♥♥ the bed.
I don't think it's crap, just the hardest to play out of the classic games (but to be honest I like 7 and 8 less).
Well, I'm at the final boss now. Will finish soon, but it's frustrating because it's easily the worst boss in the entire franchise. And only because of awful AI. I gave it 2 attempts so far and the first phase is easy, but for the 2nd phase Rebecca goes full 0 IQ mode and just at some point keeps running straight into the boss and I can't even heal her anymore once that phase starts and just ignores whatever healing items she has on them.

Heck last attempt she tried to pass on the bottom of the screen. Got hit away because she's stupid and runs straight into the boss. I lured the boss to the top part of the area, expecting her to now be able to pass it. But no, with her 0 IQ brain she decided to now try and pass through the top part, gets hit again and dies... again (she already got hit a few times before that because dumbass AI).

The boss battle is basically just full RNG. I have plenty of ammo and healing, it's just the stupid AI not doing what it needs to.

You can blame the game or you can just figure out how to do it.

This guy does a pretty good job of it: https://youtu.be/sp4e0Gnz0Ww?t=167
I already beat it. Lucked out because she didn't try to be dumb. But if an NPC is straight up running into a boss constantly, the game is the issue. The boss wasn't even targeting her much of the time because it takes only 1 magnum bullet to regain aggro, she just ran straight into it even if it was targeting Billy and would get hit for attacks meant for Billy.

Yeah, it's not the funnest fight in the franchise, but it's more than doable. I never found the AI to be that bad. I've always hated boss fights :)
Well, I was also extra annoyed by the 3rd to last final boss fight. There was a save point on the map not much ahead of where I was and another one would take me like 5 minutes of going back and forth. I figure they wouldn't throw anything hard at me, but nope. Was thrown into a boss fight just before the save room with nothing but a handgun on one and a shotgun on the other and no healing items.

And thus I died and had to redo about 15 minutes worth of gameplay. I feel like they designed it like that on purpose to bait people into progressing into certain death.

Well, moved on to replaying REmake 2 again. This time with a VR mod and 'mostly' in first person. Turned Sherry into Anya from Spy Family just for fun and it looks really good (besides I was never too fond of Sherry's redesign in this game). Wish there was Yor for Claire as well, but sadly not so I dressed her up as BotW Zelda. Do wish I could do something about the aliasing issues that makes thin objects very jaggy and the weird shimmering effect, but I haven't found a solution for that sadly. It does play really well though.
