Sure, but easy mode still has enemies that can two-shot you. These aren't missions that are above my level, since they're the missions I got right after the tutorial level. I died multiple times just walking through the slums, even with companions along! That's something that really shouldn't be happening when playing on "easy" mode.
TheMarc3 said above that "easy" mode felt more difficult than "normal" to them, which is tempting me to switch and see if maybe there's actually a bug or something.

EDIT: as a tip, dodging a lot is required in this game, it seems like, much like Witcher 2 and to a lesser extent 3.
- The game is all about a balance of disruption, status effects, and timely dodges/blocks/parries.
- The game does not have an abundance of animation locks. By this I mean: Just because you pressed the button for a light or secondary attack does not mean you have to commit to the move. During your swing for an attack you can still roll/doddge to cancel the attack animation and escape an enemy attack.
- If an enemy is attacking you opt for a high % disruptive attack. For shield/mace use the shield bash. For the staff use your secondary kick. For the dagger fire your gun. If you get lucky (with some setups you can get to upper 90 - 100% disruptive builds) you'll knock the enemy out of his attack and open it up to a couple counters by the player.
- Play with your party. Don't neglect your npc counter parts. They may not dish out as much dps as your character, but they can serve as great distractions and great disruptors. Be sure to get their gear to a level on par with yourself. Serum and crafting materials are not very hard to come by and can be used willy-nilly.
- Use the active menu when you're feeling overwhelmed. Even if you are not trying to access an item or skill in athe menu just pressing the menu button (LB or L1 on a gamepad) can give you some time to assess the situation and find a way out of the horde.
- Don't get surrounded. Use your sprint and rolls to keep the enemies from surrounding you. If you get stuck in a disrupt state you're sure to fall or take heavy damage. Stick to the edges of combat and attack during openings.
- Try to take note of npc attack patterns. The npcs have a limited moveset and follow some predictable patterns. Prioritize your biggest threats and go for them first (i.e. soldiers with guns, large lightning locust, etc.)
- Don't be afraid to run. Not every fight has to happen. Get out if you're hurt, heal up and then get back in a show those guys who not to **** with!
Happy hunting.
Combat in this game is a lot like the Witcher series - at first when you don't understand it even random scrub enemy pack no.24 is wiping the floors with you, but when you figure it out you can tear through the game with pretty much no problems.
You want to keep enemies with a negative status effect - disrupted, prone, stunned, etc.. - land a few hits, then get out. When dealing with multiple enemies you only want to try to get in a few good hits, or even just a hit, then get out. If you get overwhelmed, or allow an enemy to counter on you, it's probably over no matter how good your gear is. One on one you basically disrupt, hit them a few times, then disrupt again. Just taking a swing at a guy will usually end in a dodge, then they disrupt you, then they mess you up.
Best bet for introduction to combat is to pick up a staff and invest in that along with Techno powers. Having the shield and power fist (whatever they are actually called) helps a ton, and the staff is a control beast.
Most of the games today hold your hands or are either so hard on harder difficulties that is seems pretty much impossible....
This game has found a nice balance between those difficulties.
Altho I do agree that they might should put in more difficulty levels cus easy deffinitly doesn't feel easy...
Playing on normal myself but that doesn't take away that there is people, As stated above... That find easy to hard.
