2) Multiple industries of the same type in a town produce goods faster. You get a production boost for 3, 6 and 9 buildings.
So the cheapest beer you can make with 9+ breweries and cheapest grain and timber is about 36.6 gold. With 3 breweries, the cheapest beer is around 38.9 gold. With your one brewery, you can get as low as 39.8 gold.*
However, don't try to immediately build everything in blocks of 9. Aside from the cost, it'll take a very long time to fill them with workers, while you pay all the associated costs.
*That assumes ingredients you produce. You can sometimes buy stuff cheaper. Or if you are a pirate and plunder ships, their price will be zero (but you'll pay a lot more than what you gain in fines).
Identical industries help each other produce. For every three of one type industry that you have in a city you get a bonus to production for that industry to a maximum of 3 bonuses (9 total of that industry in that city). I try to plan my industries to have at least 6 of the same type industry in a city to keep costs down and profits high.
For instance, my brickworks in Luebeck initially produce Bricks with higher cost than the ones I can buy from the town...but using money from trade I built a few more workshops and noticed the price will steadily drop.
Now after 2/3 years operating those brickworks, my production price is $60/load (when I built my first brickwork the production price was 100+/load) while I can sell them for $80-100/load.
