How to fight the Gaint Lord and the other gaints ?

Everytime I examine the gaint trees, all I get is 'alas, nothing happened'

To be honest I forgot how to summon them. Any help ?

You need the Ashen Mist Heart from the Ancient Dragon in Dragon Shrine.

You'll need to progress in the main story far enough to get you an item that allows you to interact with the giant memories.

There's about a million giants under the black gulch if you like giants so much.

I only remember there being 2 as well, and I'm playing SotFS, not sure what you're talking about.

The number of giants under black gulch varies depending on how many players you got. If it's just you, 2 giants. The more phantoms/shades you got with you though, the more giants there are. (and yes, they respawn)

There's still 2. Haven't used phantoms in that area tho (no need), so can't speak for the above.
