two-handed maces tend to trivialize some trash. The 2h R2 is a pancake slam as I like to call it. If it connects, they get knocked prone. Chaining those is pretty safe and easy.
if you don't want to do that I do think backstab fishing after learning their attack combos is safest. Getting good at dodging into enemies and using your invincibility frames can also increase your opportunities to attack (read about Agility on a dark souls wiki if you don't know about iframes yet :) ).
No other tips come to mind. Hope some helped.
Not related to fighting them, but some potential advice.
I would definitely recommend getting into the Company of Champions to farm them if you haven't already. It took me over 250 kills (I stopped counting at that point) before I got the full set. I was running with zero item discovery boosting equips for the majority of that though. It was the most time consuming farm I've ever done on any Souls game.
I usually do that, I just sit at the first bonefire and grab the two knights there and reset.
The backswing is precisely why I favor shield bashing instead.
