About heide knights... well try to take them 1 at the time, you can backstab them but its kind of tricky, do not be too greedy when attacking, do hit and run if you can't stagger them.

If you're not confident in your parrying skills, I say there's no better enemy in the game to practice on than the white Heide Knights. Their arsenal has a grand total of three attacks, one of which is extremely super predictable and easy to parry once you have a grip on the timing.
Parrying is hard mainly because there's a small delay between pressing the button and getting parry frames. You will want your shield to connect with the enemy's sword right around when your shield passes in front of your face.

The big green dudes are all weak to blunt weaponry and will generally die in 4-5 hits from such a weapon with no upgrades: Merchant Hag Malentia (who I think you may have found already) sells clubs, but the game also throws you a Morningstar literally at the very beginning in Majula that you can use — assuming you find it, that is.
So yeah. Probably best to pick them off one at a time. You should also be doing this anyway, as respawning dudes in Ds2 will eventually stop respawning after being killed 12 times.*
*(If you want them to respawn some more, e.g. for item farming, you can sign up with the Company of Champions covenant in Majula to make them respawn perpetually again for as long as you remain a member.)
What i usually do is parry the sword wielding heide knights (since you've been to the forest you should have a buckler which makes it easy but any small shield will do) and for spear wielding ones bait their leap attack and roll-backstab them. Hope it gives you some ideas to tackle them.

(basically burning a human effigy at a bonfire cancels multiplayer functionality for that area for a time, it's applied automatically each time you beat a boss to give you respite from invasions)
But yeah, any mace will make the stone guys MUCH easier. There's a free Morning Star hidden in Majula if you explore the coast thoroughly.
