Considering your question: try a themed cosplay, for example a Roman legionaire. All you need is a great shield, a spear and a straight sword. For starting class I always recommend the beggar, since he starts SL1 and you can build him up however you want.
Because I was powerstancing Zweihanders.
Know what wasn't easy? Anything.
Lil Asterion - Warrior - Dark Knight Greataxe. Gear: Minatour Helmet, Knight Chest, Havel Gauntlets and Mirror Knight Legs. I mostly played in the Iron Keep and Belfry Sol, guarding the bell after hearing the sob story behind the two bells.
Trader Wulff - Merchant - Shotel and a sorcerer staff Gear: Imported Hood, Traveling Merchant armor, Chaos gloves and chaos boots (for that treanchcoat ish look). I used to put my shade sign down in a room in No man's wharf with the avarice god ring and when invited i traded dark knight weapons i farmed at the goblins of Aldia keep for rusty coins and then left their world. (that was the most fun to be honest because it felt kind of secret and underground)
Pale Cithe - Sorcerer - Bluemoon Greatsword (thinking it is the moonlight greatsword) Gear: No head (skinny, bald with really pale skin) Black Drangleic mage robe (sorc starting robe) heide gloves, Royal swordsman feet - his Background supposedly belonging to a cult worshiping an ancient, scaleless dragon traveling to Drangleic to secure an ancient relic sword connected to his god. Mostly used him to summon and kill Dragonbros because of his hatred for dragons. (Goes without saying, killing jugo on the spot thinking he carried the real one and always killing all dragons and ancient dragon in his path.)
I am currently working on another fun char with a friend of mine but i dont want to say anything about him cuz those are a secret for now and there is a chance i might come across some of you in game so it would spoil the fun :D
I did try a fist roll for a while, but alas there just aint enough fist weapons in the game.
Mirrah Hat (no mask), Throne Watcher Chest, Loyce Gauntlets, Loyce Leggings. Weapons were Estoc and Alonne Greatbow in main hand, off hand had Blossom Kite Shield and Eleyum Loyce.
A rampart defender of Eleyum Loyce formerly trapped in ice and was unfrozen recently. With no knowledge of what has happened and only the knowledge that the chaos must be stopped he drops his sign at the entrance to Eleyum Loyce ready to assist.
Insolent Armor
Agdayne's Cuffs
Heide Knight Leggings/Creighton's Chainmail Leggings
Sun Sword
Mirrah Shield
Solaire. :D
Make sure to be in the Sunbro covey for maximum Sunbro.

Thief Mask
Llewellyn's Armor
Havel's Gauntlets/Leggings/Lewellyn's Gloves/Leggings (I like the look of the Havel's best, bt that's personal preference. Whatever suits your fancy.)
Sun Sword
Bonefist
Lightning Dragon Chime
Illusory Ring of the Conqueror. Sun sword for normal attacks, the ring so your Dragon Chime is invisible and you can throw lightning Spears from your hands. The Bonefist goes on the left hand too, or the right, whatever your preference. I use it for a running charge attack (Have it in left hand so they don't expect it. It'll be invisible aswell.)
