Go with a Great Club (or any weapon with strike-damage) and rock the world
As Archer said, anything with Strike damage is going to wreck most of the PvE this game has. Dual Caestus I found are particularly good in the early game (As in oneshotting Forest mobs level of good), but they start to deteriorate a little bit by Lost Bastille, due to the poise that enemies tend to get there, thankfully you can switch to the Large Club there anyway!
As other people have mentioned though, strike damage is the real OP in PVE
What weapon should i aim for though for just PVE? is there anything that makes the game more easy mode? Im using Vengarls armor set and i was gunna go for Fume Knights or Sir Alonne's.
Also Havelmages are pretty strong due to their 40 (Crystal) Soul Spears and unlimited spell refill items.
The Great Club for anything else. The Pancake-R2 can be really useful because it'll knock down any human-sized enemy. Demon's and Drakekeeper's Greathammer deal more damage, but are way heavier and also have a higher stamina consumption (at least I feel so).
Equip a Caestus and strike her when she wants to cast a spell. With the Stone Ring you interrupt her and deal damage. You'll get a flawless kill.
