I have a rule about not buying games unless they are 75% and close to $10. Hell I only got DS1 when 2 came out. But DS3 was announced and I'm pretty sure I'll buy that fairly soon after release and I really wanted to play this one. Oh and fallout 4 was an exception, although that might not have been the best decision.
Back to OP: first, don't use bleed or poison melee weapons in PvE - it's not worth it.
Second, powerstancing DEX weapons does not give you many benefits. Usually you're better off with a 2h weapon. And you lose your low stamina consumption, powerstanced attacks drain tons of stamina, it's a percentage I believe (I tested it a bit with the Lost Sinners Swords: about 10+ R1s, but only 3 L2 L1s, it's not much different with DEX weapons.
And the Estoc is not as good as the Rapier/Espada Ropera because it has less counter damage. The R2 slash is useless in PvE, you can mash R1 and the unreal tracking develops a huge hitbox degree.
Even the Gaping Dragon in DS1 was tougher... sort of.
I recommend carrying the spell "repair" with you. 1 slot, low requirements, you can even spice it down to 10 INT and it's more efficient than Powders.
