scholar is just hated on because in an attempt to make the world less empty they decided to double or triple the amount of enemies in areas and increase their aggro range, aside from that its more of an upgrade than a downgrade, not to mention theres more players in scholar
i played scholar first and after beating all dark souls games went to vanilla to see what its like and it really does just feel unfinished, it was interesting seeing different enemy and item placements but thats about it
Challenging? From what i seen they make already simple ds2 even easier, then before. You can make the same build that deals triple damage compared to original game when health bars stays the same. Oh and they "fixed" tracking on all heavy weapons. You can literally turn 180 degree in a single hit.
That said if you want a "less" brutal Ds2 experience, I recommend Player Enhancements mod which adjusts gameplay mechanics akin to modern souls games.
