Except for the Smelter Swords. 60 Strength, 15 Dex, 30 Petrified Dragon Bones, 2 dead smelter Demons in the main game and in the DLC. That's everything required.
The tactic? Press R1. If it connects, press L1. Then press L2 and aim where they're rolling to. Win the fight and make a badass-gesture.
Dual weilding weapons of differnet classes can be great. Usually the easiest thing to do is to combine a high damage weapon with a fast weapon. One of them prefably should have a wide swing/good tracking. For example, I've learned to love the Mastadon GS on a Str build. You can pretty easily bait people into rolling towards you with the smaller weapon and catch them after the roll with a GS swing. And once they try to roll away, you can get another hit if your faster weapon has a decent strong attacks.
Just play around with differnt combinations.
As for powerstancing. I kinda agree an the curved sword-moveset being the best. Getting up to 5 hits isn't that rare and if you time the strong attack right, you pretty much won the fight.
Other decent movesets are the Axe and UGS powerstance.
If your into cheese go with rapiers and for ultimate fancyness Majestic greatsword in left hand.
