Report a translation problem
In Dark Souls 2 - there is no 'reverse hollowing' option at bonfires. Hollow and Human form are controlled only by using Human Effigy item from inventory (and dying to go Hollow). You can still be invaded while Hollow, but you can only summon Phantoms while Human.
Instead there's a different option - [Burn -> Human Effigy] which instead prevents any Online interactions to your world (so no Co-Op phantoms, no player Invaders) for 30 minutes. You can cancel it at the bonfire while it's active - which might be what you remember since the option only shows if it's active - and this feature activates automatically when you beat the Area Boss.
Upgrade of Bonfire is also done via [Burn] menu, it uses [Bonfire Ascetic] item which is pretty rare early game.
Should be at least 2 NPC summons for Ruin Sentinels, so you'll be in good hands.
