Always takes me a while to figure out the key on keyboard if I take a break from this game, weird keybindings but I think it's [Backspace] to confirm any changes to settings, then it should set properly.
It's a real pity too, since I personally think games like ds (or anything with a freely moved camera, let alone first person aiming in case of bows for that matter) are just worlds better on kb+m, provided it is not completely ♥♥♥♥♥♥ up.
But to your point on "always play on controller", I would still disagree. Even given how ♥♥♥♥♥♥ up it is I still prefer kb+m. In the end it's just personal preference. I just prefer kb+m so much, that I put up with fromsoft's ♥♥♥♥♥♥♥.
