Is ds2 hard to 100 percent?

I don't really enjoy dark souls II but I would like to 100 percent all souls games (sorry its just not very fun to me)

I 100 percented dark souls III a while ago and im just wondering if dark souls II is hard when compared to dark souls III's level when measuring it's difficulty, and by difficulty I mean annoyance when farming covenant items

Not really that hard tbh if you focus on it, the only big problem being the ng++ only spell that force you to rush ng+ and ng++ since its kinda late in the game

It was never as bad as farming ears + grass in DS3 from my experience. The worst are the Sunlight Medals, if you do this solo which will feel similar to how it was with DS3's covenant items dropped from mobs. But you can try find someone on the forum to farm the same bosses with, because you make them re-spawn via Bonfire Ascetics in this game, so you can just farm a boss, who dies fast, like Pursuer or Last Giant (their associated bonfire actually respawns both).

Like with the other soulsgames, you also need at least play until like half-way through NG++. Technically, you could 100% this game on NG, since you could get NG+ only boss drops via Bonfire Ascetics, but Chancellor Wellager on NG++ sells the covenant spells or Blue Sentinels and Brotherhood of Blood (Ascetics do not make him sell these) and farming them online would be the 2nd worst grind in the entire soulsborne-series, likely taking months even with 4 times the playerbase.
The worst grind would be getting the rings you get from killing 1000 player invaders and player hosts in this game, but thankfully, there's no "All Rings"-achievement in DS2.

If you mean just for achievement, no, it's not hard.
In fact, this probably is the easiest Souls game to 100% achievement.

Im trying to 100% to as i realized that i have DS1 and 3 and Elden Ring all 100%. My main concern is the spells Hidden Weapon and Sunlight Spear as those seem locked behind conveant ranks. At the end of New Game ready for plus played whole time as Bell Keeper and maybe got summoned 10-15 the game.

For the bell keeper, you don't actually need to get summoned.
Just look for npc invader (i think he was a variation of a dwarf) that appears ever so often in the belltower area. He drops the covenant item you need to collect.

If that invader doesn't appear, just quit and restart (well, not restart the game back from desktop. I mean just quit to the main menu and then restart from there).

And you probably know the falcon knights can be farmed for sunlight medals.

It's "Mad Warrior" and he looks a bit like The Predator but with a katana. Killing them counts towards Bell Keeper ranks, like killing any trespassing player would. He won't drop covenant items, since there are non for Bell Keepers (killed players only drop upgrade mats) and instead, you get rewarded by the number of kills.
