How do I stop being a zombie (hollow)
Get rid of it for good. Or at least for a while. Ruins the game for me :(

Human efigy easily farmable or do dlc then go see vendrick with all crown then put crown and hop o more creepy hollow!!

Use a human effigy from your inventory. Doing so restores your humanity. You become hollow again if you die or get cursed.

Btw, the fact that the "hero" is an undead is an integral part of the lore and dark souls story.

Also - as PaladinDaril mentioned - getting the crowns from all three DLCs as well as the King's Crown (after defeating Vendrick then backtracking to his hidey-stash) then going into his memory will enchant all 4 crowns with a hidden effect that prevents you from ever reverting to a hollowed state again.

Also also, there are two rings: the Ring of Life Protection and the Ring of Soul Protection, that when worn not only prevent you from reverting to a hollowed state after you die, but you also get to keep all your souls and not have t worry about regaining them (but the ring breaks when this happens, costs 14k to repair).

stop dying.
then, go to the room up the stairs at the cardinal tower bonfire. its one of the first bonfires you should encounter. in the room up the stairs above it, bash the door down, through another door, is a chest and the "small white soapstone" this can be used infinitely to make yourself human again.
save your effigies for when you want to do some coop.
