Is the original version worth it for the mods, or is SotFS better, even without mods that fix the game?
Scripts.

You can change the keybindings in-game, but it won't be easy. Those scripts run externally out-of-game. If you want to easily change keybindings, you'll have to do it in the script's .txt.
For example, by default that script rigs my spacebar to show up as the f key in my steam browser. With the script running, spacebar is being used to jump. However, my actual f key on my keyboard is rigged to interacting and accepting prompts.
TL;DR - Yes. Make some edits in the .txt you dl and re-run it.
EDIT:
If you decide to roll vanilla, you can change keybindings in game. However, it doesn't give me as much free range as compared to running with the script.
