Try this. I use it when I need an experimental build. Been using it for ages and never got banned. Then again, I play only offline, so there is that.

Only edit saves offline and don't make unrealistic weapons embers/titatite progress-wise.

you can probably get away with cheating, but everything needs to be kosher. dont go too crazy with it and make sure that everything adds up the way it should. don't give yourself items you shouldn't have either.

If you want to restore the lost character for PvP or NG+ - Use the Mule. This is the most rational and legal way.

Honestly it's really easy to avoid getting banned.
Dont edit sl, sm, inventory directly. Drop ♥♥♥♥, drop stacks of consumable souls.
Dont get ♥♥♥♥ not legal. Like poison Binolulars, +10 boss weps.
Dont get story locked key items like key to the embedded king ring etc.

Thats pretty much it.
