Or just pump VIG/END/ADP, spam Lifegems and use a lightning Infused Ice Rapier at min stats with Flynn's Ring, use a Twindragon's Greatshield if you hate dodgerolling and break the game, simply by running past most mobs using the Yearn-sorcery like a boring person.
Strength builds:
-Greathammers so you can literally smash everything into the ground. Even some large enemies can be pancaked with greathammers. Some greathammers don't just scale with strength though (like the Sacred Chime Hammer, which also scales with Int and Faith because of the dark damage it does)
-Greatswords/Ultra Greatswords...because Greatswords. They have long range, some have thrust attacks, and some are great at free aiming/playing unlocked and can help you take down multiple enemies at once. If you use the Greatsword (you can find one in a metal chest in No Man's Wharf) you really need to learn how to play unlocked with it to use it more effectively. Also keep in mind that big weapons like Ultra Greatswords need to be guided with the joystick in the direction you want to attack.
There are Great Axes in DS2, and they do a lot of damage but I actually don't use them often, so I can't comment on them much. I bet they still are very useful though.
Hexer builds (int-faith):
-Hexes (aka dark sorceries/dark magic) do a lot of damage once you level int and faith evenly a bit. 30 int and 30 faith is the softcap for dark damage, and with a +5 Dark Sunset Staff you can do a lot of damage with even just the spell Dark Orb. Some hexes are cast with a chime, and almost any chime does good damage with hexes but ultimately you want Caitha's Chime because it does the most damage with chime-based hexes or the Chime of Want. Caitha's Chime only allows the casting of chime-based hexes, so if you want to also cast miracles (for healing, buffs, or stuff like curing poison/bleed buildup) you should use the Chime of Want. The Chime of Want does a little less damage than Caith'as Chime but at least you can use miracles with it. As for melee weapons, hexers have a lot of good options but imo the best option for a hexer is a curved sword or spear. Curved swords because the fast dps output and spears for the range. A dark infused Manikin Sabre does a LOT of damage when it's fully upgraded and when you have at least 30 int and faith. The Manikin Sabre is a VERY rare weapon though because you have to farm it off the few Manikins in Earthen Peak (I think there's only 2 or 3 Manikins that use the Manikin Sabre). It's really worth farming it though imo. A good spear for a hexer is the Silverblack Spear. It has innate dark damage and it's a versatile weapon. Also if you join the Pilgrims of Dark covenant you'll get a ring that boosts the damage of your hexes, but each cast eats a little bit of your health away (7.5% boost in damage but each cast depletes 30hp from you). 7.5% hex damage could actually help a high damaging spell so you can one-shot late game or even dlc enemies. Plus it's fairly easy to get enough souls to keep your lifegem supply full, and lifegems can easily heal away the drained hp from that ring.
Sorceries (aka arcane magic, aka blue magic):
Easy. Just...pew pew. Just level int. Level attunement. Blast things away with a +5 Magic Staff of Wisdom (it gets S scaling in Intelligence). Any melee weapon can be useful for a pure int build as long as you infuse it with a Faintstone (which of course gives magic damage and high int scaling).
Dex builds:
Just level dex and acquire one of those filthy katanas, curved swords, or rapiers.
For the record, I hate rapiers (especially the Ice Rapier).
That's about it I think.
Basically you just level until you can't anymore and you can use everything. It's really broken for PVE.
For NG+ and DLC - Lost Sinner Sword infused and buffed with lightning. This weapon is also have low stat requirements of 12 str and 18 dex. But deals up to 1000dmg per 1 counter-hit

You will melt everything pretty easily. Probably not the best one since I didn't test everything there is but in my playthrough it made the game extremely easy.
