Single player: Ruined Fork Road, defeat the red falconers. It's a rare drop, so it takes a long time.

Multiplayer: at high Soul memory, don't bother. You'll barely get any co-op. Best farming method for online is low SM, between 30,000 - 100,000 and stay in Heide's Tower or Forest of Fallen Giants. Use Agape ring to maintain your SM.

I would say, that the "Royal Army Campsite"-bonfire is much better at Brightstone Cove Tseldora. More Falconers, closer together and even closer to the bonfire.

If you can find someone to co-op with, you can both farm Last Giant+Pursuer, using Bonfire Ascetics. This resets the area and adds 1 bonfire-intensity, like if you'd go to NG+ permanently, so for example, if you burn 3 Ascetics, that area only will be like NG+4 on actual NG+ (enemies stop scaling past intensity 8).
If you burn a Bonfire Ascetic at the "Cardinal Tower"-bonfire, it will respawn both Last Giant and The Pursuer, so you can effectively trade 1 Ascetic for 2 Sunlight Medals for both you and your co-op buddy (if either of your is a member of Heirs of the Sun). Both should also be fast kills, even on higher difficulties.
A slower alternative, which only requires 1 Bonfire Ascetic, would be farming Giant Lord with a buddy. He will keep getting more tanky though, but his arena has a Bonfire Ascetic that respawns alongside him, if one is burned at the "The Place Unbeknownst"-bonfire, so with only 1 ascetic, he can be farmed indefinitely.

I almost said Brightstone, but whenever I farm there the boars interrupt me, so it's extra time wasted because they don't let me sit at the bonfire.
