Why don't you leave certain bosses alive that you can "pop" when you are ready to level up? Not all bosses are mandatory for progression; there are a heck of a lot you can just skip so you can use them to level up later.
Are you doing this as a challenge for for multiplayer purposes?
Well, there's one, but It's not an infinite farming spot, since it requires the use of Bonfire Ascetics. You could kill The Rotten a bunch of times, which is what any%-speedrunners do.
You can pick a Bonfire Ascetic as a starting gift, pick up the one at Lost Bastille and since it's right behind The Rotten's arena, you make a detour to the Sunken King DLC, to pick up some more (there are 7 Ascetics total there). That would leave you with 9 Ascetics and all the soul items gained from that should add up to around 800k. At bonfire intensity 2 or higher, The Rotten will drop the "Old Dead One's Soul" (worth 60k) on top of his normal one (worth 25k).
Note that it's the 2nd Black Gulch-bonfire behind the petrified Hollow is the one, where you have to burn the Ascetics.
But if you intend to progress through the game normally anyways, then that's also kind of pointless too. It's useful to skip straight to Shrine of Winter, though, since it will also open, if you've collected 1 million souls on your current playthrough (+1M for each game-cycle).
Dogs can drop some small souls (400, 800 each) and humanity.
