1. Two standard swipes followed by a 360 degree sweep. The first two attacks can be avoided simply enough, but the third attack requires that you roll through it no matter what angle you're coming at the Old Knight from. Adjust your timing accordingly.
This is the hardest attack to deal with.
2. A single overhead slam with massive windup. You can just walk to the Old Knight's side during the windup and get free hits.
3. Two overhead slams. This is less free than the single overhead slam, but you can still dodge or sidestep to the Old Knight's rear to avoid this.
The Old Knight's attacks also deal very poor amounts of stamina damage; if you have a 100% block shield of any sort, they become completely harmless.
